Vegan Burger with Beetroot Patties
Ingredients
- 4 burger buns
- 1 cup baby spinach
- 1/2 cup mashed avocado
- 4 beetroot patties
- tomato slices
- red onion rings
- cabbage and carrot raw coleslaw
Preparation
Cook the beetroot patties in a pan over medium heat until heated through, about 5 minutes per side.
Toast the burger buns in a toaster or oven if desired.
Assemble the burger: Spread mashed avocado on the bottom half of each bun, add baby spinach, place a beetroot patty on top, then add tomato slices, red onion rings, and cabbage and carrot coleslaw. Cover with the top half of the bun.
