Vegan Burger with Beetroot Patties

Ingredients

  • 4 burger buns
  • 1 cup baby spinach
  • 1/2 cup mashed avocado
  • 4 beetroot patties
  • tomato slices
  • red onion rings
  • cabbage and carrot raw coleslaw

Preparation

  1. Cook the beetroot patties in a pan over medium heat until heated through, about 5 minutes per side.

  2. Toast the burger buns in a toaster or oven if desired.

  3. Assemble the burger: Spread mashed avocado on the bottom half of each bun, add baby spinach, place a beetroot patty on top, then add tomato slices, red onion rings, and cabbage and carrot coleslaw. Cover with the top half of the bun.
