Vegan Veggie Sandwich with Basil Pesto

Ingredients

  • Basil pesto
  • avocado
  • leafy greens
  • tomato slices
  • sourdough
  • melty shredded vegan cheese

Basil pesto

  • 3 cups basil
  • juice of one lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts
  • 2 garlic cloves
  • himalayan sea salt, to taste

Preparation

  1. Prepare the basil pesto according to the steps below.

  2. Assemble the sandwich by spreading pesto on bread and adding other ingredients

Basil pesto

  1. Add all ingredients except olive oil to a food processor.

  2. Pulse until evenly chopped.

  3. Slowly add olive oil through the top of the processor and pulse until combined.

Sandwich assembly

  1. Spread basil pesto on slices of sourdough bread

  2. Layer avocado, leafy greens, tomato slices, and vegan cheese on top

  3. Close the sandwich and serve immediately, optionally toasted
