Easy Gluten-Free Vegan Banana Pancakes

Ingredients

  • 1 cup oat flour (ground from whole gf oats)
  • 1 cup gluten-free flour (mixture of buckwheat and teff)
  • 1 1/2 tsp baking powder
  • Pinch of salt
  • 1 tsp ground cinnamon
  • 2 ripe bananas, mashed
  • 2 Tbsp melted coconut oil, plus more for cooking
  • 1 tsp vanilla extract
  • 1 Tbsp maple syrup or other liquid sweetener
  • 1 1/2 cups (250 ml) non-dairy milk (unsweetened almond milk used)

Preparation

  1. In a bowl, combine and mix the dry ingredients.

  2. In another bowl, combine the wet ingredients.

  3. Mix the wet ingredients into the dry using a fork or whisk; don't worry if it's a bit lumpy, just ensure there are no floury dry bits.

  4. Heat your pan on medium heat and add a little coconut oil.

  5. Fry 2 tablespoons of mixture until small bubbles appear on the surface, then flip and cook for around 1 minute.

  6. Eat with more banana or berries and coconut yoghurt.
