Easy Gluten-Free Vegan Banana Pancakes
Ingredients
- 1 cup oat flour (ground from whole gf oats)
- 1 cup gluten-free flour (mixture of buckwheat and teff)
- 1 1/2 tsp baking powder
- Pinch of salt
- 1 tsp ground cinnamon
- 2 ripe bananas, mashed
- 2 Tbsp melted coconut oil, plus more for cooking
- 1 tsp vanilla extract
- 1 Tbsp maple syrup or other liquid sweetener
- 1 1/2 cups (250 ml) non-dairy milk (unsweetened almond milk used)
Preparation
In a bowl, combine and mix the dry ingredients.
In another bowl, combine the wet ingredients.
Mix the wet ingredients into the dry using a fork or whisk; don't worry if it's a bit lumpy, just ensure there are no floury dry bits.
Heat your pan on medium heat and add a little coconut oil.
Fry 2 tablespoons of mixture until small bubbles appear on the surface, then flip and cook for around 1 minute.
Eat with more banana or berries and coconut yoghurt.
