Arabic Fried Pastry with Syrup
Ingredients
- 2 cups flour
- 1 cup semolina
- 2 teaspoons nigella seeds
- 1/4 cup ground aniseed
- 1/4 cup ground fennel
- 1/8 teaspoon baking soda
- 1/2 cup olive oil
- 1 cup water
For frying
- Corn oil for frying
For serving
- Syrup for serving
Preparation
In a mixer bowl, place flour, semolina, nigella seeds, ground aniseed, ground fennel, baking soda, and olive oil. Attach the dough hook and mix until combined. Add water and mix on medium speed for one minute to form a cohesive dough.
Take a piece of dough the size of an egg, shape it into a rope that is 1 cm wide and 0.5 cm thick, and cut the rope into 4 cm pieces.
Hold a piece of dough between your fingers and roll it into a spiral shape, then place it in a dish.
Place the syrup in a deep dish and set it aside.
In a deep frying pan, add corn oil to a height of 2 cm and heat over medium heat.
Drop the dough pieces into the hot oil, wait for them to float, then use a slotted spoon to turn them until they are light golden brown.
Remove the fried pieces from the oil and immediately place them into the syrup. Toss for a few seconds and then transfer to a serving dish.
