Spicy Crispy Fried Chicken
Ingredients
- 500 grams chicken fillet
Marinade
- 1 cup milk
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon coriander
- 1/2 teaspoon ginger
- 1/2 teaspoon cardamom
- 1/2 teaspoon mahlab
- 1 pinch nutmeg
- 1 pinch turmeric
- 1 teaspoon salt
- 1/2 teaspoon white pepper
Flour mixture
- 3 cups flour
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
Egg mixture
- 2 cups cold water
- 1 large egg
- 1 tablespoon vinegar
- 1 pinch nutmeg
For frying
- Corn oil
Preparation
Cut the chicken fillet into thin, long strips.
In a bowl, place the milk and lemon juice, let it sit for a few minutes.
Add the garlic powder, coriander, ginger, cardamom, mahlab, nutmeg, turmeric, salt and pepper, add the chicken, cover the bowl and refrigerate for several hours.
For the flour: In a bowl, place the flour, cornstarch, salt and mix. Take 3 tablespoons from the chicken marinade and add it to the flour, mix to make it crumbly.
In a bowl, place the water, egg, vinegar and nutmeg, whisk with a fork to mix.
Heat the oil in a deep skillet to medium heat.
Take a piece of chicken, place it in the flour and lightly coat it without pressing, just roll it in the flour.
Immediately lift the chicken strip and place it in the egg mixture, wait a few seconds, then quickly remove it and place it back in the flour, toss it in the flour with light pressure to coat it thickly, and you'll notice the flour becomes coarse with many bits.
Immediately place the chicken in the hot oil, wait a few minutes while gently turning it until it becomes golden brown.
