Traditional Turkish ŞEkerpare Dessert

Ingredients

  • 250 grams butter
  • 1 cup semolina plus 2 tablespoons additional
  • 2 eggs (reserve one yolk for topping)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Slightly less than 1 cup powdered sugar
  • 1 packet vanilla
  • 3 to 3.5 cups flour (as needed)

Cocoa version

  • 1/3 of the dough
  • 1 tablespoon cocoa

Syrup

  • 4 cups sugar
  • 4 cups water
  • Quarter lemon

Preparation

  1. Prepare the syrup before starting the dessert.

  2. When adding the syrup, ensure it is at room temperature and the dessert is hot.

  3. Add water, sugar, and lemon juice to a pot and bring to a boil.

  4. After boiling, simmer on low heat for 10 minutes, then remove from heat and let cool to room temperature.

  5. For the dough, mix softened butter and all ingredients except flour in a deep bowl.

  6. Knead the mixture while gradually adding flour.

  7. Form the dough into egg-sized pieces and shape them.

  8. Place on a greased baking sheet with some space between, brush with the reserved egg yolk, and score the tops with a fork.

  9. Bake in a preheated 180°C oven for 30-35 minutes until golden brown.

  10. After baking, remove from oven, let cool for about 2 minutes, then pour the room temperature syrup over the hot dessert.
