Coconut Almond Date Bliss Balls

Ingredients

  • 18-20 dates
  • 1/2 cup almonds or your choice of nuts
  • 2 tablespoons almond flour or your choice of flour
  • 1/2 cup cacao nibs
  • 1/2 cup shredded toasted coconut
  • 1 tablespoon ground chia seeds
  • 1 tablespoon ground flax seeds
  • 2 tablespoons baking chocolate chips
  • 1 teaspoon coconut oil

Preparation

  1. Blend the dates, nuts, and flour in a food processor until evenly chopped, pulsing for at least 2-3 minutes.

  2. Add the cacao nibs and toasted coconut, then blend again until evenly mixed.

  3. Add the chia and flax seeds.

  4. Continue blending until the mixture starts to stick together, which may take a few minutes as the almonds release their natural oils to bind the mixture.

  5. Scoop out approximately a tablespoon of the mixture and carefully roll it into a ball, squeezing tightly to bind, then place on a parchment-lined dish.

  6. Refrigerate for at least one hour.

  7. Melt 2 tablespoons of baking chocolate chips with 1 teaspoon of coconut oil in a microwave for 30 seconds or until melted.

  8. Drizzle the melted chocolate over the chilled bliss balls, sprinkle with crushed almonds and more toasted coconut, then return to the refrigerator for a few minutes to harden the chocolate, or enjoy immediately.

  9. Store in an airtight container in the fridge for up to a week.

  1. These bliss balls are so delicious they probably won't last long!
