Lemon and Blueberry Overnight Oats

Ingredients

  • 4-5 heaped tablespoons oats
  • 4 tablespoons plain or lemon yoghurt
  • Handful blueberries
  • Boiling water (enough to nearly cover oats)
  • Few drops lemon extract or essence
  • Squeeze of lemon juice
  • Drizzle of syrup (sugar free, maple, etc.)

Preparation

  1. Put oats into an empty container and pour over boiling water to nearly cover them. Mix in lemon juice.

  2. Layer with yoghurt and top with blueberries. If using plain yoghurt, mix the lemon essence into it here to make it zesty.

  3. Eat straight away or leave in fridge overnight or until you’re ready to eat it.

Tips

  1. Blueberries can be fresh or frozen.

  2. Yoghurt can be fat-free, Greek, vegan, or other types.

  3. Syrup can be sugar-free, maple, or similar varieties.
