Raspberry Chia Protein Parfait

Ingredients

Chia layer

  • 2 Tbsp white chia seeds
  • 1 cup almond milk
  • 1/2 tsp vanilla extract or powder
  • Stevia

Pink smoothie layer

  • 1/2 cup frozen raspberries
  • 2 strawberries
  • 1/2 zucchini peeled and chopped
  • 1/2 scoop your favourite protein powder (optional)
  • 1/4 cup coconut water or plain filtered water
  • Stevia to taste
  • Ice cubes

Preparation

  1. Place ingredients in a jar and shake.

  2. Leave in the fridge for an hour or overnight.

  3. Blend until smooth adding coconut water to desired consistency.

  4. Layer the chia mixture and the smoothie in a glass or jar to assemble the parfait.
