Cinnamon Swirl Pumpkin Cake
Ingredients
- 3/4 cup all-purpose flour
- 2/3 cup almond flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup pumpkin purée
- 3/4 cup milk
- 2 eggs
Swirl topping
- 1/3 cup granulated sugar
- 1 teaspoon cinnamon
- 1.5 teaspoons milk
Frosting
- 1/2 cup powdered sugar
- 3 tablespoons maple syrup
- 1 teaspoon water
Preparation
Preheat oven to 350°F and grease a 9-inch cake pan.
In a mixing bowl, whisk together the wet ingredients, then stir in the dry ingredients.
Spread the batter into the cake pan, top with swirl mix, and bake for 25 minutes.
Frosting
Mix 1/2 cup powdered sugar, 3 tablespoons maple syrup, and 1 teaspoon water to make the frosting.
Tips
Use a plastic bag to add the swirl for easier application.
