Festive Peppermint Mocha Pancakes

Ingredients

  • 1 banana
  • 2 eggs
  • 3-4 tablespoons chocolate chips
  • 1 tablespoon unsweetened cocoa powder
  • 1/4 to 1/2 teaspoon peppermint extract
  • ghee or butter (for cooking)

Topping

  • 1/2 crushed candy cane
  • 1 tablespoon melted chocolate chips

Preparation

  1. Whisk the egg.

  2. Mash the banana, leaving it a little chunky to give the pancakes texture.

  3. Add the cocoa powder and peppermint extract.

  4. Mix everything together.

  5. Stir in the chocolate chips.

  6. Heat a pan over low to medium heat.

  7. Add a little ghee or butter to the pan.

  8. Spoon the batter into the pan, making small pancakes for easy flipping.

  9. Cook until the edges brown and bubbles form, then flip and cook the other side until done.

  10. Top with melted chocolate chips and half a crushed candy cane.

Notes

  1. This recipe makes 8-9 mini pancakes and is gluten-free.
