Gluten-Free Vegan Pancake Pizza

Ingredients

  • 150g gluten-free oat flour
  • 50g almond flour
  • Pinch of salt
  • 90g applesauce
  • 100ml almond milk
  • 40ml maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking soda + splash of lemon juice

Toppings

  • Coconut yogurt + grated coconut
  • Fresh fruit
  • Optional: granola and dark chocolate

Preparation

  1. Preheat the oven to 170 degrees Celsius and line the baking sheet with parchment paper.

  2. Mix the flours, salt, vanilla, sweetener, applesauce, and almond milk together.

  3. Add the dissolved baking soda last.

  4. Spread the batter in a round shape on the baking sheet and bake for about 20 minutes until golden brown.

  5. Top with coconut yogurt, grated coconut, fresh fruit, and optionally granola and dark chocolate for a festive finish.
