Peanut Butter Bites with Raspberry Surprise

Ingredients

  • 1 cup smooth peanut butter
  • 1/3 cup rice malt syrup
  • 1/2 cup coconut flour
  • 1/2 tsp cinnamon
  • Fresh raspberries

Preparation

  1. Combine the peanut butter and rice malt syrup together, then add the cinnamon and coconut flour. Mix until a smooth dough forms. Refrigerate for at least 30 minutes.

  2. Remove the dough from the fridge, break off equal sized portions around 15. Flatten each portion, place a raspberry in the center, wrap and roll the dough into a ball. Store in an airtight container in the fridge and eat as desired.
