Turkish Minced Meat Stuffed Eggplant Kebab
Ingredients
- 500 grams ground meat
- 3 onions
- 1 green chili pepper
- 1 red bell pepper
- 2 tomatoes
- 2 cloves garlic
- 1 tablespoon tomato paste
- 1 teaspoon red pepper flakes
- 1 teaspoon black pepper
- 1.5 teaspoons salt
- 3-4 tablespoons vegetable oil
- 4 eggplants
For eggplant coating
- 1/4 cup vegetable oil
For sauce
- 1 tablespoon tomato paste
- slightly more than 1/2 cup water
- 1/2 teaspoon salt
Preparation
Peel the eggplants in a striped pattern, cut them in half lengthwise, and score the tops with a knife to create a pattern.
Brush the eggplants with oil and roast them in a 240°C oven until browned.
Remove the flesh from the eggplants.
Sauté the minced meat mixture with onions, garlic, and spices until cooked.
Stuff the eggplants with the sautéed minced meat mixture.
Decorate the tops with tomato and pepper slices.
Prepare the sauce by mixing tomato paste, water, and salt, then pour it over the stuffed eggplants.
Bake at 200°C for about 30 minutes.
