Classic Turkish Stuffed Eggplant Dish

Ingredients

  • 350 grams ground meat
  • 3 eggplants
  • 1.5 onions
  • 1 red bell pepper
  • 2-3 green bell peppers
  • 3-4 cloves garlic
  • 1.5 tablespoons tomato paste
  • 4-5 tablespoons grated tomato
  • 1 cup olive oil
  • 1/3 bunch parsley
  • Black pepper, cumin, red pepper flakes, salt

Topping

  • 1 tomato
  • 2 green peppers

Preparation

  1. Cut the eggplants lengthwise and fry until soft and golden.

  2. In a separate pan, sauté onions and garlic until fragrant, then add ground meat, peppers, tomato paste, grated tomato, and spices, cooking until the meat is browned and mixture is well combined.

  3. Stuff the fried eggplants with the meat mixture.

  4. Arrange the stuffed eggplants in a baking dish and top with tomato slices and green pepper rings.

  5. Bake in a preheated oven until the topping is soft and the dish is heated through.
