Vegan Banana Buckwheat Pancakes

Ingredients

  • 3/4 cup (90g) buckwheat flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of salt
  • 1 ripe banana
  • 1/2 cup plant milk
  • 1 tbsp apple cider vinegar
  • 1 tbsp oil (melted coconut, olive, etc.)

Preparation

  1. In a mixing bowl combine the dry ingredients

  2. In a blender blend the wet ingredients

  3. Add blended mixture to the bowl with dry ingredients and mix to combine

  4. Bake 6 pancakes on a hot, lightly greased non-stick skillet, flipping when bubbles appear
