Vegan Buckwheat Banana Pancakes

Ingredients

  • 2/3 cup buckwheat flour
  • 1/2 cup plant milk
  • 1/2 mashed banana
  • 1 tbsp liquid sweetener
  • 1 tbsp flax meal
  • 2/3 tsp baking powder
  • Pinch of salt

Preparation

  1. In a mixing bowl, combine the buckwheat flour, plant milk, mashed banana, liquid sweetener, flax meal, baking powder, and a pinch of salt.

  2. Mix the ingredients until a smooth batter forms.

  3. Heat a non-stick skillet over medium heat.

  4. Pour a ladleful of batter onto the skillet to form a pancake.

  5. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.

  6. Repeat the process with the remaining batter.

  7. Serve the pancakes with your favorite toppings.
