Buckwheat Banana Pancakes
Ingredients
- 100g buckwheat flour
- 200ml plant milk
- 1 ripe banana
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tbsp maple syrup
- 1 tsp coconut oil
Preparation
Grind buckwheat into fine flour using a blender.
Mash the banana and then mix in the maple syrup and milk until smooth.
Pour in the flour, baking powder, and salt and mix until smooth.
Heat a pan and add 1 teaspoon coconut oil.
Pour in a ladle of batter and cook for about 1 minute on each side. Flip when little bubbles appear.
