Air Fryer Tofu Bergedil
Ingredients
- 1 large pack dried tofu
- 4 potatoes (boiled and mashed)
- 1 cup minced chicken
- spring onions and celery leaves
- white pepper powder
- salt to taste

Egg wash
- eggs
- salt
Dipping sauce
- 10 stalks bird's eye chili (fried and blended)
- 2 cloves garlic
- 2 tablespoons brown sugar
- 1 tablespoon oyster sauce
- 2 tablespoons sweet soy sauce
- a pinch of salt
Preparation
Boil the potatoes until cooked and then mash them as if preparing for patties.
Cook the minced chicken briefly until the liquid evaporates.
Mix the cooked chicken with all the ingredients including the mashed potatoes and season to taste.
Take the dried tofu, cut it open, and remove the filling, then add the removed filling to the mixture.
Stuff the mixture back into the tofu shells.
Before air frying, dip the stuffed tofu in the egg wash to make the skin crispier and prevent the filling from falling out.
Air fry at 180 degrees Celsius for 15 minutes.
Dipping sauce
Blend all the sauce ingredients together.
Cook the blended mixture until it thickens and adjust seasoning to taste.
