Cheat Coconut Rice for Breakfast and Dessert
Ingredients
- 1 bag of microwave rice
- 1/2 can reduced fat coconut milk
- Pinch salt
- 1 tbsp sugar, sweetener or syrup
- Fruit of choice
Preparation
Cook a bag of rice in the microwave for 2 minutes.
Empty it into a large bowl, add milk, salt and sugar and stir until combined.
Eat straight away warm or put it into an empty jam jar or container with some fruit (peach, mango and berries work well), pop a lid on and leave it in the fridge until you want to eat it.
