Matzo Brei - Classic Passover Breakfast
Ingredients
- 2 sheets of Matzo
- 1-2 cups of warm water
- 4 vegan eggs (e.g., 12 tbsp of Just Egg)
- 2 tbsp vegan butter (e.g., Forager Project Butter)
- Salt and pepper
- Optional: 1 1/2 tsp sugar (for sweet version)
- Optional toppings: Butter, jam, maple syrup, ketchup, hot sauce
Preparation
Break the matzo sheets in half and place them in a large bowl. Pour warm water over the matzo and let it sit for about 30-45 seconds. Drain the water and break the matzo into smaller 1 1/2" pieces. Season with salt and pepper, and set aside.
In a large skillet over medium-low heat, melt the vegan butter. Add the soaked matzo to the skillet and sauté for about a minute or two, until the matzo pieces start to take on some color.
Season the vegan eggs with salt and pepper and pour them over the matzo, ensuring that all the pieces are covered.
Slowly scramble the egg and matzo mixture until the eggs are fully cooked or cooked to your desired doneness.
Serve the Matzo Brei as is or with optional toppings such as ketchup, hot sauce, butter, jam, or maple syrup.
