Decadent Chocolate Yogurt Muffins

Ingredients

  • 1/3 cup flour (buckwheat or other)
  • 1/2 cup yogurt (coconut yogurt, such as @alpro)
  • 1/4 cup almond meal (or grated coconut)
  • 2 tbsp plant-based milk
  • 3 tbsp cacao powder
  • 2 eggs
  • 1 tsp baking powder
  • Optional: chocolate chips or nuts

Preparation

  1. In a bowl, mix the dry ingredients (flour, almond meal, cacao powder, baking powder) until well combined.

  2. In another bowl, whisk together yogurt, eggs, and plant-based milk. If the mixture appears too thick, add a touch more milk or water to achieve the desired consistency.

  3. Combine the wet and dry mixtures and stir well. You can also fold in chocolate chips or nuts if desired.

  4. Pour the batter into muffin molds.

  5. Bake in the oven at 180°C (350°F) for about 25 minutes.

  6. Once baked, let the muffins cool before enjoying.
