Green Sambal with Eggplant and Salted Fish

Ingredients

  • 2 eggplants, sliced
  • 200g salted fish, cut
  • Salt or seasoning to taste
  • Sugar as needed
  • Green tomato, cubed

Spices

  • 1-2 ounces green chilies
  • 10 shallots
  • 2 garlic cloves

Preparation

  1. Boil the salted fish with sugar, rinse it, and drain

  2. Wash the eggplant, then fry it and fry the salted fish as well, and drain

  3. Fry the green chilies, garlic, and shallots briefly, then coarsely grind them and add salt or seasoning

  4. Add squeezed lime juice to the ground mixture

  5. Heat oil in a pan, add the green chili mixture and green tomato, stir, add sugar, stir again, add the salted fish, stir evenly, then add the eggplant, stir until well mixed, turn off the heat, and serve with warm rice
