Gresik Nasi Krawu with Shredded Beef
Ingredients
Shredded beef
- 500g beef
- 3 garlic cloves
- Tamarind water (from 2 tamarind pods dissolved in water)
- 1 tablespoon sweet soy sauce
- Salt
- Sugar
Shrimp paste sambal
- 3 large red chilies
- 20 bird's eye chilies
- 1 teaspoon shrimp paste
- 1 tablespoon petis
- Sugar
- Salt
Yellow coconut serundeng
- 150g grated coconut
- 2 kaffir lime leaves
- Sugar
- Salt
- Ground spices: 5 shallots, 2 garlic cloves, 1 teaspoon turmeric powder, 1 teaspoon coriander
Red coconut serundeng
- 150g grated coconut
- 2 kaffir lime leaves
- Sugar
- Salt
- Ground spices: 3 large red chilies, 5 shallots, 2 garlic cloves, 1/2 teaspoon turmeric powder, 1 teaspoon coriander
Accompaniments
- White rice
- Salted eggs
- Cucumber
Preparation
Shredded beef
Boil the beef until tender, then remove and shred.
Sauté garlic until fragrant, then add the shredded beef and tamarind water.
Season with salt, sugar, and sweet soy sauce. Add enough water and cook until the water reduces, then check the taste.
Shrimp paste sambal
Fry the red chilies and bird's eye chilies.
Then pound them together with the remaining ingredients and check the taste.
Fry the sambal again briefly.
Coconut serundeng
Mix the grated coconut with the ground spices and stir well.
Season with salt and sugar.
Dry roast in a pan over low heat until cooked and dry.
Serving suggestions
Serve with white rice, salted eggs, and cucumber.
