Three Flavors Braided Pie

Ingredients

  • 3 cups flour
  • 1 tablespoon instant yeast
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 3 tablespoons powdered milk
  • 3 tablespoons melted butter
  • 1/4 cup olive oil
  • 1 cup warm water

Filling

  • 1/2 cup black olive slices
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 3 tablespoons za'atar

Glazing mixture

  • 1 egg
  • 2 tablespoons milk

Preparation

  1. In a mixer bowl, place half of the flour, yeast, salt, sugar, and milk powder. Mix, attach the dough hook, run on low speed for a few seconds to combine the ingredients, add butter and oil, knead on medium speed for 2 minutes, add water, and knead until you get a cohesive dough that separates from the bowl.

  2. Place the dough in a deep oiled bowl, cover with plastic wrap, and let it rise in a warm place until doubled in size.

  3. Prepare a shallow tray by oiling it.

  4. Divide the dough into 3 equal parts. On a floured surface, roll each part into a 13x7 inch rectangle. Place olives in the first, cheese in the second, and oil and za'atar in the third.

  5. Roll each rectangle into a rope shape, braid them together, place the braid in the prepared tray, cover with plastic wrap, and let it rise in a warm place until doubled in size.

  6. Position the oven rack in the middle and preheat the oven to 180°C.

  7. In a small bowl, mix egg and milk with a fork until well combined for the glaze.

  8. Place the braid in the tray and brush it with the glaze mixture.

  9. Bake for 25 minutes.
