Three Flavors Braided Pie
Ingredients
- 3 cups flour
- 1 tablespoon instant yeast
- 1 teaspoon salt
- 1 teaspoon sugar
- 3 tablespoons powdered milk
- 3 tablespoons melted butter
- 1/4 cup olive oil
- 1 cup warm water
Filling
- 1/2 cup black olive slices
- 1/2 cup crumbled feta cheese
- 3 tablespoons olive oil
- 3 tablespoons za'atar
Glazing mixture
- 1 egg
- 2 tablespoons milk
Preparation
In a mixer bowl, place half of the flour, yeast, salt, sugar, and milk powder. Mix, attach the dough hook, run on low speed for a few seconds to combine the ingredients, add butter and oil, knead on medium speed for 2 minutes, add water, and knead until you get a cohesive dough that separates from the bowl.
Place the dough in a deep oiled bowl, cover with plastic wrap, and let it rise in a warm place until doubled in size.
Prepare a shallow tray by oiling it.
Divide the dough into 3 equal parts. On a floured surface, roll each part into a 13x7 inch rectangle. Place olives in the first, cheese in the second, and oil and za'atar in the third.
Roll each rectangle into a rope shape, braid them together, place the braid in the prepared tray, cover with plastic wrap, and let it rise in a warm place until doubled in size.
Position the oven rack in the middle and preheat the oven to 180°C.
In a small bowl, mix egg and milk with a fork until well combined for the glaze.
Place the braid in the tray and brush it with the glaze mixture.
Bake for 25 minutes.
