Vegan Protein Burgers
Ingredients
- 250 g textured plant protein (e.g., Dragon Superfoods)
- 700 ml hot water
- 30 g ground flaxseeds
- 60 ml hot water
- 10 g garlic powder
- 10 g dried parsley
- 1 tbsp salt
- 1 tsp cumin powder
- 1 tsp turmeric powder (e.g., Forest of Herbs Indian Summer)
- 50 g breadcrumbs
- Flour (for coating)
- Wholegrain burger buns
- Lettuce
- Tomatoes
- Red onion
- Vegan mayo
Preparation
In a large bowl, mix the textured plant protein with 700 ml of hot water. Let it sit for about 10 minutes to absorb the water, stirring occasionally.
Prepare flax eggs by mixing ground flaxseeds with 60 ml of hot water in a small bowl. Let it thicken for 5 minutes, then add it to the protein mixture.
Add garlic powder, dried parsley, salt, cumin powder, turmeric powder, and breadcrumbs to the mixture. Mix well to combine all the ingredients.
Divide the mixture into equal balls using a kitchen scale. Shape the balls into burger patties. Roll them in flour to prevent sticking.
Heat a non-stick pan and add a little bit of oil if desired. Fry or bake the patties on both sides until golden brown.
Assemble the burgers using wholegrain buns, vegan mayo, lettuce, tomatoes, and red onion. Serve and enjoy!
