Vegan Turkish Meatballs Over Turkish Rice

Ingredients

  • pre-made kofta ( recipe in the bio )
  • 1 cup of chopped tomatoes
  • 2 onions
  • 1 cup of tomato purée
  • 3 cloves of garlic
  • 1/4 cup of tomato paste
  • 1 cup of water
  • 1 tablespoon vinegar or lemon juice or pomegranate molasses
  • salt and pepper
  • herbs

Preparation

  1. Preheat oven to 200°c

  2. Chop veggies and spread them in a baking tray and place in the oven

  3. Blend onion in a blender and sauté with a little bit of oil in a pan

  4. Add the tomato paste and sauté until oil is separated

  5. Blend the fresh tomatoes , tomato purée and garlic and add them to the onions with salt and pepper

  6. Add all the balsamic vinegar,spices, herbs and water and simmer until it becomes a thick sauce

  7. Add the sauce and kofta to the vegetables in the oven and bake until everything is cooked through
