Recipe: Peach Cobbler Choats with Banana Nice Cream

Ingredients

  • 1/2 cup of oats
  • 1 T of chia seeds
  • 1 cup of plant based milk
  • 1 or 2 diced peaches
  • 2 T of maple syrup
  • 1 tsp of cinnamon
  • 1 cup of wild blueberries
  • 2 T of maple syrup
  • 1 T of vanilla plant based yogurt
  • 2 frozen bananas
  • 1/2 cup of oat milk

Preparation

  1. Soak 1/2 cup of oats with 1 T of chia seeds in 1 cup of plant based milk. I use oat milk

  2. Make peach compote by sautéing 1 or 2 diced peaches in a pan with 2 T of maple syrup and 1 tsp of cinnamon. Heat until soft

  3. Make wild blueberry compote by sautéing 1 cup of wild blueberries with 2 T of maple syrup. Heat until thick and jammy

  4. Add 1 T of vanilla plant based yogurt to your soaked oats

  5. In a jar: layer your peaches, choats, blueberry compote, more yogurt and then top with your favourite plant based ice cream. I blended 2 frozen bananas with 1/2 cup of oat milk. Froze until it resembled a soft serve ice cream and then piped it on top. Top with fresh blueberries and chocolate or quinoa pops
