Recipe: Peach Cobbler Choats with Banana Nice Cream
Ingredients
- 1/2 cup of oats
- 1 T of chia seeds
- 1 cup of plant based milk
- 1 or 2 diced peaches
- 2 T of maple syrup
- 1 tsp of cinnamon
- 1 cup of wild blueberries
- 2 T of maple syrup
- 1 T of vanilla plant based yogurt
- 2 frozen bananas
- 1/2 cup of oat milk
Preparation
Soak 1/2 cup of oats with 1 T of chia seeds in 1 cup of plant based milk. I use oat milk
Make peach compote by sautéing 1 or 2 diced peaches in a pan with 2 T of maple syrup and 1 tsp of cinnamon. Heat until soft
Make wild blueberry compote by sautéing 1 cup of wild blueberries with 2 T of maple syrup. Heat until thick and jammy
Add 1 T of vanilla plant based yogurt to your soaked oats
In a jar: layer your peaches, choats, blueberry compote, more yogurt and then top with your favourite plant based ice cream. I blended 2 frozen bananas with 1/2 cup of oat milk. Froze until it resembled a soft serve ice cream and then piped it on top. Top with fresh blueberries and chocolate or quinoa pops
