Banana Bread

Ingredients

  • 4 bananas
  • 3 eggs
  • 1/4 cup of melted coconut oil
  • 1 tsp of vanilla extract
  • 3 tsp of maple syrup
  • 2 1/2 cups of almond flour
  • 1 tsp of baking powder
  • 1 tsp of ground cinnamon

Preparation

  1. Preheat oven to 200c/fan 180c

  2. Melt the coconut oil in pan and allow to cool

  3. Mash the bananas with a fork in a large bowl, then add the whisked eggs, vanilla extract, maple syrup, and coconut oil and mix everything together

  4. In another bowl, combine the almond flour, baking powder and ground cinnamon

  5. Add in the wet ingredients and give it a good stir

  6. Line your bread tin with baking paper or grease it with coconut oil, then pour the mixture in

  7. Bake on a middle shelf for 50 minutes until golden on top

  8. Insert a knife and if it comes out clean it is done

  9. Allow to cool, slice and enjoy!
