Creamy Vegan Oats with Fried Bananas

Ingredients

  • 1 cup jumbo oats
  • 2 cups almond milk
  • 1/2 tsp vanilla extract
  • 1 banana, halved lengthways
  • 2 tsp coconut oil
  • Optional sprinkling of coconut sugar
  • 1/2 cup frozen mixed berries
  • Maple syrup (optional)
  • 1/4 cup almonds, toasted and chopped
  • Peanut butter

Preparation

  1. Add oats, almond milk and vanilla to a pan. Bring to a low boil then reduce to a simmer and cook for 5 to 7 minutes or to your taste.

  2. Heat coconut oil in a non-stick pan. Optionally dust banana with coconut sugar and fry for 1 to 2 minutes, turning once until slightly soft.

  3. Add frozen berries to a mug of boiling water, allow to sit for 3 minutes then drain.

  4. Add porridge to a bowl and top with berries, caramelised banana, almonds, peanut butter and optional drizzle of maple.

Notes

  1. This recipe serves 2 people and is highly customizable with toppings like peanut butter and maple syrup.
