Delicious Loaded Falafel Burger
Ingredients
Falafel patty
- 3 cups of chickpeas, cooked and rinsed
- 1/2 cup flat leaf parsley
- 1/2 medium red onion
- 3 garlic cloves
- 1/4 cup chickpea flour
- 1/4 cup bread crumbs (panko or regular)
- 1/2 tsp baking soda
- 1 tsp cumin
- 1 tsp ground coriander
- 1/2 tsp cayenne
- 1 tbsp lemon juice
- Salt to taste
- 1 tbsp sesame seeds (optional)
- 1 small serrano pepper (optional)
Toppings
- Hummus
- Creamy tahini lemon dill dressing
- Pickled red onions
- Couscous tomato parsley salad
- Red cabbage
- Lettuce
- Vegan Feta cheese
Preparation
Add chopped red onion, garlic, serrano pepper and parsley to a food processor and pulse until broken down.
Add chickpeas, spices, baking soda, and lemon juice, and pulse just until combined. Season to taste with salt.
Stir in sesame seeds, chickpea flour and bread crumbs, then refrigerate mixture for at least 30 minutes.
Use a 1/2 cup measuring cup to divide chickpea mixture into 4 large patties, and pan fry them in a cast iron skillet over low to medium heat for about 5 minutes each side. Optional: use 1-2 tbsp of avocado or olive oil for a nicer crust.
Serve on a sesame bun with lots of toppings and enjoy.
Notes
You can substitute either chickpea flour or bread crumbs with quick oats, oat flour, gluten-free flour, or all-purpose flour.
