Easy Pumpkin Muffins for Breakfast on the Go
Ingredients
- 2 1/2 cup oats
- 3/4 cup coconut sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1 teaspoon ginger
- 1/4 teaspoon sea salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 cup pumpkin purée
- 3/4 cup plant milk
- 1/4 cup applesauce
- 1 teaspoon apple cider vinegar
- 1 teaspoon vanilla
- Pecans (for topping)
Preparation
Mix all of your dry ingredients together.
Then mix all of your wet ingredients.
Then mix both the wet and dry together.
Bake at 375 degrees for about 20 minutes.
Then top with pecans and enjoy.
