Gluten-Free Vegan Chocolate Peanut Butter Cookies

Ingredients

  • 1 ripe banana
  • 150 ml gluten free oats (can use regular if not gluten-free)
  • 2 tbsp peanut butter (smooth or crunchy)
  • 2 tbsp dark vegan chocolate

Preparation

  1. Preheat oven to 200°C/390°F.

  2. Mash the banana with a fork in a bowl.

  3. Add oats and peanut butter and stir to form a batter.

  4. Line a baking tray with parchment paper.

  5. Divide the batter into 4 portions on the tray and shape into round cookies about 1.5 cm thick.

  6. Bake in the middle of the oven until golden brown, about 25 minutes.

  7. Let cool for a few minutes.

  8. Melt the dark chocolate and drizzle it over the cookies.

  1. These cookies are best enjoyed fresh.
