Linda Mccartney Sausage Pasta
Ingredients
- 1 onion, diced
- 1 red chilli, chopped
- 250g cherry tomatoes
- 8 slices of tinned roasted peppers
- 2 garlic cloves, minced
- 1 tsp chilli flakes
- 1 tsp salt and pepper
- 750ml vegetable stock
- 250g pasta
- 6 linda mccartney sausages
- 2 handfuls spinach -
Preparation
Cook the sausages according to the pack instructions
When they are cooked, chop into chunks
Add the cherry tomatoes to a pan and cook in a little bit of oil for a few minutes
Add the onion, chilli, chilli flakes and salt and pepper to the pan and cook for another 4 minutes
Add the garlic and cook for one more minute
With a hand blender, blend the mixture slightly
Add the pasta and stock to the pan and cook for 10 minutes
Finally add the spinach and sausage to the pan and stir in
