No-Bake Fig and Nut Bars
Ingredients
Base
- 40 g hazelnuts
- 60 g pecans
- 2 tbsp flaxseed
- 2 tbsp shredded coconut
- 175 g dried figs or dates
- 1/2 tsp cinnamon
- Pinch of salt
- 1/2 tbsp water
Cashew cream
- 90 g cashews, soaked
- 120 ml coconut milk
- 40 g shredded coconut
- 30 ml vanilla syrup or maple syrup with vanilla
- Pinch of salt
Topping
- Fresh figs (about 4)
Preparation
Combine all base ingredients in a food processor and mix until the mixture sticks together when pressed between fingers.
Line a square or rectangular baking pan with plastic wrap or parchment paper and spoon the mixture into it.
Press it firmly with the back of a spatula until the base is flat and even, then place it in the freezer.
In a food processor, mix the cashews and gradually add the coconut milk, vanilla syrup, and salt while the machine is running until smooth.
Add the shredded coconut and pulse briefly, then remove the base from the freezer and spread the cashew cream over it.
Return to the freezer to set for about 2 hours or overnight.
Cut into bars and let thaw for 15 minutes before serving, then garnish with slices of fresh figs.
Notes
These bars can be stored in the freezer and enjoyed later in the winter.
Ideal to serve with a warm drink.
