Paleo Pumpkin Bites with Chocolate Drizzle

Ingredients

  • 1/2 cup nut or seed butter
  • 1/2 cup + 3 tablespoons pumpkin puree unsweetened
  • 1-2 tablespoons maple syrup (optional)
  • 1 serving vanilla protein or 2 scoops collagen peptides (if paleo)
  • 1 teaspoon pumpkin pie spice
  • 15 dates
  • 1/4 cup raw unsalted pecans chopped
  • 1/2 cup dairy free chocolate chips

Preparation

  1. Combine the pumpkin puree with the nut butter in a medium bowl.

  2. Add the pumpkin spice, maple syrup, and protein powder. Note: If using vegan protein powder, add 3 extra tablespoons of pumpkin puree.

  3. Cut the dates lengthwise and remove the pits.

  4. Stuff the dates with the pumpkin mixture and the chopped pecans.

  5. Place them in the fridge to cool slightly while you make the chocolate drizzle.

  6. Melt the chocolate in the microwave using 30-second intervals, stirring well. May take 1 minute total.

  7. Once smooth, drizzle chocolate over the dates.

  8. Return to the fridge or freezer to harden the chocolate.

  9. Store in the fridge or freezer.
