Protein-Packed Chocolate Zucchini Brownies

Ingredients

Brownies

  • 1 cup organic almond butter
  • 1 scoop chocolate protein powder
  • 1 1/2 cups zucchini
  • 1 flax egg
  • 1/4 cup maple syrup
  • 2 squirts stevia
  • 1 tsp baking powder
  • 1/2 cup cocoa powder
  • 1/4 cup raw cacao powder

Glaze

  • 1/4 cup melted coconut oil
  • 2 tbsp maple syrup
  • 1/4 cup cocoa powder
  • 1 scoop protein powder

Preparation

  1. Combine all ingredients in a food processor until almost smooth.

  2. Grease your pan with coconut oil.

  3. Pour batter in pan.

  4. Bake at 350°C for a half hour.

Glaze

  1. Combine until smooth and set aside.

  2. Once brownies are done, glaze and put in fridge until it hardens.

Tips

  1. These are perfect for post-workout and sneaking veggies into diets.

  2. Zucchini is low in calories, high in fiber, and a good source of potassium and vitamins.

  3. Despite moderate FODMAP load, 1/2 cup zucchini is fine for low FODMAP diets.
