Protein-Packed Chocolate Zucchini Brownies
Ingredients
Brownies
- 1 cup organic almond butter
- 1 scoop chocolate protein powder
- 1 1/2 cups zucchini
- 1 flax egg
- 1/4 cup maple syrup
- 2 squirts stevia
- 1 tsp baking powder
- 1/2 cup cocoa powder
- 1/4 cup raw cacao powder
Glaze
- 1/4 cup melted coconut oil
- 2 tbsp maple syrup
- 1/4 cup cocoa powder
- 1 scoop protein powder
Preparation
Combine all ingredients in a food processor until almost smooth.
Grease your pan with coconut oil.
Pour batter in pan.
Bake at 350°C for a half hour.
Glaze
Combine until smooth and set aside.
Once brownies are done, glaze and put in fridge until it hardens.
Tips
These are perfect for post-workout and sneaking veggies into diets.
Zucchini is low in calories, high in fiber, and a good source of potassium and vitamins.
Despite moderate FODMAP load, 1/2 cup zucchini is fine for low FODMAP diets.
