Quick Pickled Red Onions
Ingredients
- 5 medium red onions
- 1 1/2 cups boiling water
- 1 1/2 cups white vinegar
- 3 tbsp maple syrup or other sweetener of choice
- 1 1/2 tbsp salt
Optional flavor boosters
- 1 tbsp peppercorns
- 1 tbsp chili flakes
- 2 garlic cloves halved
- fresh herbs such as rosemary, thyme, oregano
- 1 bay leaf
Preparation
Cut the onions in half, stem to root, and peel them.
Thinly slice them using a mandolin or a sharp knife and separate the layers using your hands.
Add them into a large jar along with any additional flavor boosters if using.
Mix together boiling water, white vinegar, maple syrup and salt and pour over the onions.
Seal the jar and refrigerate for at least 2 hours, probably overnight to allow flavors to develop.
