Salted Caramel Banana Chia Puddings

Ingredients

  • 1/3 cup chia seeds
  • 1/3 to 3/4 cup water
  • 2-3 tablespoons plant-based yogurt or coconut cream
  • sweetener to taste (such as maple syrup)
  • 1 teaspoon vanilla extract
  • pinch of salt
  • banana
  • peanut butter

Salted caramel coconut chips

  • 1/2 cup coconut chips
  • 1/4 cup maple syrup
  • 1 tablespoon melted coconut oil
  • 1/4 teaspoon salt

Preparation

  1. Soak 1/3 cup chia seeds in 1/3 to 3/4 cup water and whisk well, then let sit for 10-15 minutes until thickened.

  2. Add 2-3 tablespoons plant-based yogurt or coconut cream, sweetener to taste, 1 teaspoon vanilla extract, and a pinch of salt to the chia mixture.

  3. Layer the chia pudding with banana, peanut butter, and the salted caramel coconut chips.

  4. Prepare the salted caramel coconut chips using the separate instructions before assembling.

Making salted caramel coconut chips

  1. Preheat oven to 180 degrees Celsius.

  2. In a bowl, combine 1/2 cup coconut chips, 1/4 cup maple syrup, 1 tablespoon melted coconut oil, and 1/4 teaspoon salt, then mix well.

  3. Spread the mixture on a parchment-lined baking tray.

  4. Bake for 8-10 minutes, then remove and let cool before using.

Tips

  1. Firm bananas are low FODMAP, while overripe ones are high in fructose, so choose accordingly. Avoid very green bananas as they may cause digestive issues due to high resistant starch.
