Sweet Potato Vanilla Smoothie

Ingredients

  • 1 cup nut or seed milk
  • 1/3 cup steamed and cubed purple sweet potato
  • 1/2 cup steamed cauliflower
  • 1/2 cup steamed zucchini
  • 1 date
  • Vanilla bean
  • 1/2 tablespoon nut or coconut butter
  • 1 tablespoon flax seeds
  • cinnamon and cardamom

Toppings

  • sesame seeds
  • 1/2 tablespoon pecan butter
  • cacao nibs

Preparation

  1. Steam the purple sweet potato, cauliflower, and zucchini until tender.

  2. If preparing a cold smoothie, freeze the steamed vegetables after cooling.

  3. In a blender, combine all ingredients except the toppings and blend until smooth.

  4. Pour into a glass or bowl and add the toppings: sesame seeds, pecan butter, and cacao nibs.

  5. Serve warm or cold as desired.
