Sweet Potato Vanilla Smoothie
Ingredients
- 1 cup nut or seed milk
- 1/3 cup steamed and cubed purple sweet potato
- 1/2 cup steamed cauliflower
- 1/2 cup steamed zucchini
- 1 date
- Vanilla bean
- 1/2 tablespoon nut or coconut butter
- 1 tablespoon flax seeds
- cinnamon and cardamom
Toppings
- sesame seeds
- 1/2 tablespoon pecan butter
- cacao nibs
Preparation
Steam the purple sweet potato, cauliflower, and zucchini until tender.
If preparing a cold smoothie, freeze the steamed vegetables after cooling.
In a blender, combine all ingredients except the toppings and blend until smooth.
Pour into a glass or bowl and add the toppings: sesame seeds, pecan butter, and cacao nibs.
Serve warm or cold as desired.
