Spiced Pear Oatmeal Breakfast Bowl
Ingredients
- 1/2 cup gluten free oats
- 1 tbsp chia seeds
- 1/4 cup frozen zucchini
- 1 cup nut milk
- 1 pear
- coconut oil for spraying
- cinnamon
- all spice
- blueberries
- pecan butter
Preparation
Soak overnight: Combine the oats, chia seeds, frozen zucchini, and nut milk in a container and refrigerate overnight.
Prepare baked spiced pear: Cut pear in half, slice the back, spray both sides with coconut oil, season with cinnamon and all spice, then bake at 350°F for 15-20 minutes.
Assemble the breakfast bowl: Place the soaked mixture in a bowl and top with the baked spiced pear, blueberries, pecan butter, and a sprinkle of cinnamon.
