Spiced Pear Oatmeal Breakfast Bowl

Ingredients

  • 1/2 cup gluten free oats
  • 1 tbsp chia seeds
  • 1/4 cup frozen zucchini
  • 1 cup nut milk
  • 1 pear
  • coconut oil for spraying
  • cinnamon
  • all spice
  • blueberries
  • pecan butter

Preparation

  1. Soak overnight: Combine the oats, chia seeds, frozen zucchini, and nut milk in a container and refrigerate overnight.

  2. Prepare baked spiced pear: Cut pear in half, slice the back, spray both sides with coconut oil, season with cinnamon and all spice, then bake at 350°F for 15-20 minutes.

  3. Assemble the breakfast bowl: Place the soaked mixture in a bowl and top with the baked spiced pear, blueberries, pecan butter, and a sprinkle of cinnamon.
