Vegan French Toast for Brunch

Ingredients

  • 1 cup unsweetened oat milk
  • 1 tablespoon ground flaxseed + 3 tablespoons water
  • 1 teaspoon baking powder
  • 1/4 cup cornstarch
  • 1 teaspoon ground cinnamon
  • 2 tablespoons maple syrup or brown sugar
  • 1 teaspoon vanilla extract
  • 6-8 slices thick-sliced bread
  • 2 tablespoons vegan butter

Preparation

  1. Combine water and ground flaxseed to make a vegan egg.

  2. In a shallow bowl, whisk together the oat milk, flax egg, baking powder, cornstarch, cinnamon, maple syrup and vanilla extract.

  3. Add a teaspoon of vegan butter to a pan over medium-high heat and whisk the batter once more right before dipping the thick-sliced bread.

  4. Fully dip both sides of the bread in batter and let soak for a few seconds.

  5. Place the bread on the hot pan and cook for about 3 minutes on each side, until golden brown.

  6. Add vegan butter as needed to the pan in between French toasts.

Serving suggestions

  1. Serve with fresh fruit, syrup and nut butter.
