Vegan French Toast for Brunch
Ingredients
- 1 cup unsweetened oat milk
- 1 tablespoon ground flaxseed + 3 tablespoons water
- 1 teaspoon baking powder
- 1/4 cup cornstarch
- 1 teaspoon ground cinnamon
- 2 tablespoons maple syrup or brown sugar
- 1 teaspoon vanilla extract
- 6-8 slices thick-sliced bread
- 2 tablespoons vegan butter
Preparation
Combine water and ground flaxseed to make a vegan egg.
In a shallow bowl, whisk together the oat milk, flax egg, baking powder, cornstarch, cinnamon, maple syrup and vanilla extract.
Add a teaspoon of vegan butter to a pan over medium-high heat and whisk the batter once more right before dipping the thick-sliced bread.
Fully dip both sides of the bread in batter and let soak for a few seconds.
Place the bread on the hot pan and cook for about 3 minutes on each side, until golden brown.
Add vegan butter as needed to the pan in between French toasts.
Serving suggestions
Serve with fresh fruit, syrup and nut butter.
