Apple and Pear Breakfast Muffins
Ingredients
- 1 cup green banana flour
- 1 small to medium pear
- 1 green apple
- 1/3 cup mixed nuts, seeds and coconut flakes
- 1 teaspoon vanilla bean paste or pure vanilla extract
- 1 teaspoon cinnamon
- 1 batch sweet chia eggs
- 1 heaped tablespoon coconut or full fat green yogurt
- 1 teaspoon baking powder
Preparation
Prepare sweet chia eggs by mixing 2 tablespoons chia seeds with 4 tablespoons maple syrup and 2 tablespoons water, and let sit for 10 minutes until congealed.
Preheat oven to 180 degrees Celsius.
In a large bowl, mix all the dry ingredients.
Add all the wet ingredients and stir to evenly combine.
Line the muffin tray with butter or oil.
Spoon the mixture into the muffin tray.
Bake for 20 minutes or until golden.
