Banana Bread Baked Oats

Ingredients

  • 55g jumbo oats, ground into oat flour (@momafoods)
  • 35g vanilla vegan protein powder (@awesomesupps)
  • 1 tbsp milled flaxseeds (@linwoodshealthfoods)
  • 1/2 tsp baking powder (@droetkerbakes)
  • 1/4 tsp ground cinnamon (@organicburst)
  • 2/3 banana, mashed to a purée
  • 150ml unsweetened almond milk (@alpro)
  • 20g natural almond milk yoghurt (@nushfoods) - optional

Toppings

  • 1/3 banana, sliced
  • Light syrup (@sweetfreedomuk) - sub for maple syrup
  • 10g jumbo dark chocolate chips

Preparation

  1. Preheat the oven to 160 degrees Celsius. Mix all the ingredients except the toppings together.

  2. Transfer to an ovenproof ramekin or bowl. Top with banana slices and chocolate chips. Lightly brush the banana slices with liquid sweetener or maple syrup and sprinkle over some ground cinnamon.

  3. Bake for 20-25 minutes. Allow to cool slightly before devouring.
