Brownie Banana Bread
Ingredients
- 1 flax egg (or regular egg beaten)
- - 1 ripe banana mashed (about 120 g)
- - 2 tbsp maple syrup (42 g)
- - 2 tbsp milk (30 g - I use almond)
- - 1/2 tsp vanilla extract
- - 1/2 cup flour (60 g)
- - 1/2 cup almond flour (56 g - sub another 1/2 cup flour but also add 1 tbsp oil for richness and do not overmix!)
- - 1/4 cup cocoa powder sifted (24 g)
- - 1 tsp baking powder
- - Pinch salt
- - Sprinkle of 1/2 tbsp chocolate chips (7 g)
- - Raspberries (optional)
Preparation
Preheat oven to 350F and grease your pan
Mix all except chocolate and raspberries (if you’re using non-gf flour, combine wet and dry separately, then combine the two but avoid overmixing)
Transfer to loaf pan and sprinkle chocolate (if using raspberries, we’re raspberry obsessed lately)
Bake 40 minutes until knife inserted comes out clean
Cool completely and slice
