Chocolate Brownie with Optional Chocolate Chunks

Ingredients

  • 150 grams unsalted butter
  • 150 grams 70% cocoa chocolate
  • 2 eggs
  • 1/2 cup demerara sugar (or xylitol)
  • 2 tablespoons cocoa powder
  • 3 tablespoons rice flour or oat flour
  • 1 tablespoon vanilla extract
  • 150 grams chopped 70% cocoa chocolate (optional)

Preparation

  1. Melt the chocolate and butter together in the microwave

  2. Let cool slightly

  3. Add the eggs and mix well

  4. Add the vanilla extract, cocoa powder, and rice flour or oat flour, mixing until combined

  5. Stir in the chopped chocolate, if using

  6. Grease an 18 cm round pan with butter and dust with cocoa powder

  7. Pour the batter into the pan

  8. Bake in a preheated oven at 200Β°C for 25 minutes
