Chocolate Zucchini Loaf
Ingredients
- 2 cups zucchini, shredded
- 1/2 cup coconut oil, melted
- 1 cup brown sugar, packed
- 1/2 cup non-dairy milk
- 1 tsp vanilla
- 2 flax eggs, (mix 2 tbsp ground flax seeds + 2 tbsp water, rest for 5 mins)
- 1 tsp apple cider vinegar
- 2 cup flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 cup cacao powder
- a pinch of salt
- 1/4 cup non-dairy chocolate chips
- optional icing:
- 1/2 cup powdered sugar
- 1 tbsp non-dairy milk
- 1/2 tsp vanilla extract .
Preparation
Start by mixing together coconut oil, brown sugar, vanilla, milk, flax eggs, vinegar and zucchini
Sift in flour, baking powder, baking soda, cacao powder, salt and mix until combine
Fold in chocolate chips and pour into a greased loaf pan
Bake in a pre-heated oven at 350 degrees f for 1 hour and 10 mins
For icing: combine all ingredients, mix well and drizzle over cooled loaf
