Coconut Chia Puddings with Color Variations
Ingredients
- 1 can Edward & Sons coconut milk
- 2 cups almond milk
- 3-4 tablespoons maple syrup
- Pinch of salt
- 2 scoops collagen or protein powder (optional)
- 1 cup chia seeds
Flavor variations
- 1 teaspoon matcha powder
- 1/4 cup blueberries
- 1/4 cup raspberries
- 1/2 teaspoon turmeric
Preparation
Blend the coconut milk, almond milk, maple syrup, salt, and protein powder.
Divide the mixture into 4 separate bowls.
Blend or whisk the raspberries into one bowl, blueberries into another, matcha into another, and turmeric into the last.
Stir 1/4 cup chia seeds into each bowl.
Refrigerate for at least 10 minutes to thicken.
Top with fruit and enjoy.
