Coconut Chia Puddings with Color Variations

Ingredients

  • 1 can Edward & Sons coconut milk
  • 2 cups almond milk
  • 3-4 tablespoons maple syrup
  • Pinch of salt
  • 2 scoops collagen or protein powder (optional)
  • 1 cup chia seeds

Flavor variations

  • 1 teaspoon matcha powder
  • 1/4 cup blueberries
  • 1/4 cup raspberries
  • 1/2 teaspoon turmeric

Preparation

  1. Blend the coconut milk, almond milk, maple syrup, salt, and protein powder.

  2. Divide the mixture into 4 separate bowls.

  3. Blend or whisk the raspberries into one bowl, blueberries into another, matcha into another, and turmeric into the last.

  4. Stir 1/4 cup chia seeds into each bowl.

  5. Refrigerate for at least 10 minutes to thicken.

  6. Top with fruit and enjoy.
