Creamy Cashew Butter Porridge with Raspberries

Ingredients

  • 1 cup jumbo oats
  • 1 cup water, plus extra as needed
  • 1 cup plant-based milk
  • 1 tsp vanilla extract
  • 1 tbsp cashew butter

Toppings

  • Raspberries
  • Toasted coconut chips
  • Melted dark chocolate
  • Dark chocolate buttons

Preparation

  1. Combine all ingredients in a saucepan.

  2. Cook slowly over low heat, stirring occasionally and adding more liquid as needed, until creamy and thickened, about 5-10 minutes.

  3. Remove from heat and let sit for a minute before serving.

Assembly

  1. Top the porridge with raspberries, toasted coconut chips, melted dark chocolate, and dark chocolate buttons.
