Creamy Cashew Butter Porridge with Raspberries
Ingredients
- 1 cup jumbo oats
- 1 cup water, plus extra as needed
- 1 cup plant-based milk
- 1 tsp vanilla extract
- 1 tbsp cashew butter
Toppings
- Raspberries
- Toasted coconut chips
- Melted dark chocolate
- Dark chocolate buttons
Preparation
Combine all ingredients in a saucepan.
Cook slowly over low heat, stirring occasionally and adding more liquid as needed, until creamy and thickened, about 5-10 minutes.
Remove from heat and let sit for a minute before serving.
Assembly
Top the porridge with raspberries, toasted coconut chips, melted dark chocolate, and dark chocolate buttons.
