Tahini & Vanilla Porridge with Cinnamon Apple & Walnuts

Ingredients

  • 40g oats
  • Water
  • 1 tsp vanilla extract
  • 1 heaped tsp of tahini
  • Apples
  • Olive oil
  • 1/2 tsp cinnamon
  • Walnuts
  • Dark maple syrup
  • Dark chocolate
  • Mixed seeds
  • Granola

Preparation

  1. In a pot, combine the oats and enough water to reach your desired porridge consistency. Cook over medium heat, stirring occasionally, until the oats are cooked and the mixture is creamy.

  2. Stir in the vanilla extract and the heaped teaspoon of tahini. Mix well until the tahini is fully incorporated into the porridge. Remove from heat.

  3. In a separate pan, heat a touch of olive oil over medium heat. Add the sliced apples and sprinkle with cinnamon. Sauté until the apples are tender and lightly caramelized.

  4. Add the walnuts to the pan with the apples and drizzle with a splash of dark maple syrup. Cook for another minute, stirring to coat the walnuts and apples evenly.

  5. To serve, divide the tahini and vanilla porridge into bowls. Top each bowl with the cinnamon apples and walnuts mixture.

  6. Sprinkle dark chocolate, mixed seeds, and granola over the top of each bowl.

  7. Finish by drizzling a light tahini over the toppings for extra flavor.
